Mavor’s Island Comfort has best vegan dish in Veg It Up! challenge

Veg P.E.I. has announced that the winning dish in its second annual Veg it Up! vegan restaurant challenge is Island Comfort, created by executive chef Miguel Cervantes and the Mavor’s team.

“We were so impressed with all the dishes that were created for Veg it Up! this year,” said Veg P.E.I. president Hilary Wood.

“We had 14 local chefs from restaurants and food businesses competing. There was a real buzz, and each entry was delicious. In the end, Islanders voted Mavor’s “Island Comfort” their favourite.”

The dish was a cashew, almond and mushroom loaf with a velvety parsnip puree, alongside salted baked beets, roasted Island red potatoes and crunchy chickpeas. In fact, it was such a hit that this week Mavor’s is adding it to their regular menu — and their Facebook page is exploding with excitement.”

Veg It Up! is an annual restaurant challenge organized by Veg P.E.I., inviting Island chefs to showcase their skills creating dishes with

vegan ingredients and encouraging Islanders to experience the possibilities of delicious and healthy plant-based dining.

Islanders can try as many dishes as they like and vote for their favourite. Last year’s response was so positive that the 2017 challenge was extended to cover 10 days.

Veg P.E.I. is a non-profit organization that aims to help Islanders explore the possibilities of plant-based living. It values health, compassion, community, agriculture and sustainability. For more information, click here to visit Veg PEI on Facebook.
